1 lb ground beef

1 can (15 oz) black beans, drained and rinsed

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade)

1/2 cup water

4 large flour tortillas

1 cup shredded lettuce

1 cup chopped tomatoes

1 cup shredded cheddar cheese

1/2 cup sour cream (optional)

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Sauté the Aromatics: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sauté for another minute until fragrant.

    Cook the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Break it apart with a spatula and cook until browned, usually about 5-6 minutes. Drain excess fat if necessary.

      Season and Combine: Sprinkle the taco seasoning over the cooked beef, then stir in the black beans. Add 1/2 cup of water and let the mixture simmer on medium heat for about 5 minutes, stirring occasionally until the sauce thickens.

        Warm the Tortillas: While the beef mixture is simmering, warm the flour tortillas. You can do this on a dry skillet or in the microwave for a few seconds until they’re soft and pliable.

          Assemble the Wraps: Lay a warm tortilla flat on a plate. Spoon a generous portion of the beef and bean mixture onto the center of the tortilla. Top with shredded lettuce, diced tomatoes, cheddar cheese, and a dollop of sour cream if desired.
