2 cups cooked white rice (or brown rice for a healthier option)

1 pound boneless, skinless chicken breasts, diced

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 cup frozen mixed vegetables (peas, carrots, corn, etc.)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt, pepper, garlic powder, onion powder, and paprika. Cook for 5-7 minutes, until the chicken is browned and cooked through. Remove from heat.

      Mix Ingredients: In a large mixing bowl, combine the cooked rice, cream of chicken soup, chicken broth, frozen mixed vegetables, and half of each cheese (cheddar and mozzarella). Stir in the cooked chicken until well mixed.

        Prepare the Baking Dish: Lightly grease a 9x13 inch baking dish. Pour the chicken and rice mixture into the dish, spreading it evenly.

          Add Cheese Topping: Sprinkle the remaining cheddar and mozzarella cheese on top of the mixture.
