Ingredients

8 oz (about 225g) penne pasta

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1/2 cup heavy cream or coconut milk for a lighter option

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1 cup fresh basil leaves, chopped

Fresh basil sprigs for garnish

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.

Add Tomatoes: Pour in the crushed tomatoes, and stir in the Italian seasoning and red pepper flakes (if using). Season with salt and pepper. Let it simmer for about 5 minutes to allow the flavors to meld.

Make it Creamy: Lower the heat and stir in the heavy cream (or coconut milk). Mix until well combined, and let it cook for another 3-5 minutes until slightly thickened.

Combine Pasta and Sauce: Add the cooked penne to the sauce, tossing to coat evenly. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.

Finish with Cheese and Basil: Remove from heat and stir in the grated Parmesan cheese until melted and creamy. Lastly, fold in the chopped basil.

Serve: Plate the pasta and garnish with additional fresh basil sprigs and a sprinkle of Parmesan cheese. Enjoy your delicious creamy tomato basil pasta!
