1 lb (450g) medium shrimp, peeled and deveined

2 tablespoons honey

3 tablespoons soy sauce (low sodium preferred)

1 tablespoon rice vinegar

2 teaspoons cornstarch

2 tablespoons vegetable oil (split)

1 bell pepper (red or yellow), sliced

1 cup snap peas, trimmed

3 green onions, chopped (white and green parts separated)

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

Cooked rice or quinoa, for serving

Sesame seeds, for garnish

Optional: red pepper flakes for heat

Prepare the marinade: In a medium bowl, whisk together honey, soy sauce, rice vinegar, and cornstarch until well combined. Set aside half of the mixture for later.

    Marinate the shrimp: Add the shrimp to the remaining marinade and let them sit for 10 minutes to absorb the flavors.

      Prep the vegetables: While the shrimp marinate, wash and chop the bell pepper, snap peas, and green onions.

        Heat the pan: Over medium-high heat, add 1 tablespoon of vegetable oil to a large skillet or wok. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove shrimp from the skillet and set aside.

          Stir-fry the veggies: In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic, grated ginger, sliced bell pepper, and snap peas. Stir-fry for about 3-4 minutes until the veggies are tender yet crisp.

            Combine everything: Return the cooked shrimp to the skillet and pour in the reserved marinade. Toss everything together and cook for an additional 1-2 minutes until the sauce thickens slightly.
