8 chicken drumsticks

1 cup apple cider

1 medium onion, sliced

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon ground cinnamon

½ teaspoon nutmeg

1 tablespoon Dijon mustard

1 tablespoon brown sugar

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Pat the chicken drumsticks dry with paper towels. Season them generously with salt and pepper on all sides.

    Sear the Chicken: In a large cast-iron skillet or heavy-bottomed pot, heat the olive oil over medium-high heat. When the oil is hot, add the chicken drumsticks. Sear for about 3-4 minutes on each side until golden brown. Remove the drumsticks from the skillet and set them aside.

      Sauté Aromatics: In the same skillet, reduce the heat to medium and add the sliced onion. Sauté for about 5 minutes until the onions are softened and translucent. Add the minced garlic and sauté for another 1-2 minutes until fragrant.

        Combine the Braising Liquid: In a mixing bowl, whisk together the apple cider, Dijon mustard, brown sugar, thyme, cinnamon, and nutmeg. Pour this mixture into the skillet with the onions and garlic, scraping up any browned bits from the bottom of the pan.

          Add the Chicken: Return the seared chicken drumsticks to the skillet. Make sure they are submerged in the braising liquid as much as possible. Bring the mixture to a simmer.

            Braise the Chicken: Cover the skillet with a lid (or a piece of aluminum foil if your skillet doesn’t have a lid) and reduce the heat to low. Allow the chicken to braise for 30-35 minutes, turning them halfway through to ensure even cooking.

              Final Touches: After braising, the chicken should be cooked through (internal temperature should reach 165°F). Uncover the skillet and increase the heat to medium-high for an additional 5-10 minutes to reduce the sauce slightly, stirring occasionally.
