1 cup apple cider

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 cup unsalted butter, softened

2 cups powdered sugar

2 tablespoons heavy cream (or milk)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

Prepare the Oven and Muffin Tin: Preheat your oven to 350°F (175°C). Line a standard muffin tin with 12 cupcake liners.

    Reduce the Apple Cider: In a small saucepan over medium heat, bring the apple cider to a boil. Reduce the heat and let it simmer until it's reduced to about 1/2 cup (approximately 10-15 minutes). Let it cool.

      Mix Wet Ingredients: In a large bowl, beat together the softened butter and granulated sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and the cooled reduced apple cider.

        Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
