¾ cup unsalted butter, softened

3 large eggs

1 tablespoon vanilla extract

1 cup buttermilk

½ cup granulated sugar (for topping)

Simmer the Cider: In a small saucepan, bring the apple cider to a boil over medium-high heat. Reduce the heat and simmer until the cider is reduced to about 1 cup, approximately 15-20 minutes. Let it cool slightly.

    Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 10-inch bundt pan and set it aside.

      Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Set this mixture aside.

        Cream Butter and Sugars: In a large mixing bowl, cream the softened butter with the granulated and brown sugars until light and fluffy—about 3-4 minutes.
