For the crust:

1 ½ cups all-purpose flour

2 tablespoons granulated sugar

½ teaspoon salt

½ cup unsalted butter, chilled and cubed

4-5 tablespoons ice water

For the filling:

3 medium-sized apples (a mix of Granny Smith and Honeycrisp works wonderfully), peeled, cored, and sliced

1 tablespoon lemon juice

¼ cup brown sugar

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1 tablespoon all-purpose flour (for thickening)

1 tablespoon unsalted butter, cut into small pieces

1 egg, beaten (for egg wash)

Coarse sugar for sprinkling (optional)

Instructions
 

Make the crust: In a large mixing bowl, whisk together the flour, sugar, and salt. Add the chilled cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

    Prepare the filling: In another bowl, combine the sliced apples with lemon juice, brown sugar, cinnamon, nutmeg, and flour. Mix well and let sit for about 10 minutes for the flavors to meld.

      Preheat your oven: Preheat your oven to 400°F (200°C).

        Roll out the dough: On a lightly floured surface, roll out the chilled dough into a large circle, about 12 inches in diameter, with a thickness of about ¼ inch. Transfer the rolled dough to a parchment-lined baking sheet.

          Assemble the galette: Spoon the apple filling into the center of the rolled-out dough, leaving a 2-inch border around the edge. Dot the filling with small pieces of butter.
