For the waffles:

1 cup all-purpose flour

1 tablespoon sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 large egg

1 cup milk

1/4 cup vegetable oil

1 teaspoon vanilla extract

1 medium apple, peeled and finely chopped (preferably Granny Smith)

For the apple filling:

2 medium apples, peeled, cored, and sliced

2 tablespoons butter

2 tablespoons brown sugar

1 teaspoon cinnamon

Juice of 1/2 lemon

To assemble:

Maple syrup (optional, for serving)

Whipped cream or yogurt (optional, for a topping)

Chopped pecans or walnuts (optional, for garnish)

Instructions
 

Prepare the waffle batter: In a large bowl, mix the flour, sugar, baking powder, and salt. In another bowl, whisk together the egg, milk, vegetable oil, and vanilla extract. Gradually pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the finely chopped apple.

    Preheat the waffle maker: Turn on the waffle maker according to the manufacturer’s instructions and let it heat up.

      Cook the waffles: Lightly grease the waffle maker with cooking spray or a small amount of oil. Pour enough batter to cover the bottom of the waffle iron, close it, and cook for about 3-5 minutes, or until golden brown and crispy. Repeat until all the batter is used, and you have about 8 waffles.

        Cook the apple filling: In a large skillet over medium heat, melt the butter. Add the sliced apples, brown sugar, cinnamon, and the lemon juice. Cook for about 5-7 minutes, or until the apples are tender and slightly caramelized. Stir occasionally to prevent burning.
