Avocado Chicken Salad Wraps

2 cups cooked chicken breast, shredded or diced

1 ripe avocado, mashed

1/4 cup Greek yogurt or mayonnaise

1 tablespoon Dijon mustard

1 tablespoon fresh lime juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1/4 cup red bell pepper, diced

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped (optional)

4 large whole wheat tortillas or lettuce leaves (for a low-carb option)

Extra lime wedges, for serving

Instructions
 

In a large mixing bowl, combine the shredded chicken, mashed avocado, Greek yogurt (or mayonnaise), Dijon mustard, and lime juice. Mix well until all ingredients are combined smoothly.

    Add the garlic powder, onion powder, salt, and pepper to taste. Stir to distribute seasonings evenly.

      Gently fold in the diced red bell pepper, chopped celery, red onion, and fresh cilantro (if using) until evenly mixed.

        Lay out the tortillas on a flat surface. If using lettuce, carefully separate the leaves and lay them flat.

          Spoon an equal portion of the chicken salad mixture onto the center of each tortilla or lettuce leaf.

            Fold in the sides of the tortilla and then roll it up from the bottom to the top, ensuring the filling is secured inside. If using lettuce, simply roll it up tightly.

              Slice the wraps in half diagonally and serve with extra lime wedges on the side for an added zest!
