4 large whole wheat tortillas

1 cup cooked ham, diced

1 can (15 oz) chili beans (with liquid)

1 cup corn (canned or frozen)

1 cup red bell pepper, diced

1 cup shredded cheddar cheese

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Sour cream (for serving, optional)

Instructions
 

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced red bell pepper and sauté for about 3-4 minutes until softened.

    Combine Ingredients: Stir in the cooked ham, chili beans (with their liquid), corn, ground cumin, smoked paprika, garlic powder, salt, and pepper. Mix well and let it simmer for about 5-7 minutes, allowing the flavors to meld together.

      Assemble the Wraps: Lay a whole wheat tortilla flat on a clean surface. Spoon a generous amount of the ham chili mixture onto the center of the tortilla, leaving some space at the edges. Sprinkle shredded cheddar cheese on top.

        Roll the Tortilla: Fold in the sides of the tortilla, then roll it up tightly from the bottom to completely encase the filling. Repeat with the remaining tortillas and filling.

          Optional Grilling: For a crispy wrap, place each stuffed wrap on a grill pan over medium heat and grill for 2-3 minutes on each side until golden brown and the cheese melts.
