Ingredients

1 pound ground beef

1/2 pound ground pork

1 cup breadcrumbs (Italian seasoning preferred)

1/2 cup grated Parmesan cheese

1/2 cup diced onion

2 cloves garlic, minced

1 large egg

1/4 cup milk

1/4 cup chopped fresh parsley

1 tablespoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/2 cup ketchup (plus extra for topping)

8 slices of bacon

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, diced onion, minced garlic, egg, milk, chopped parsley, Worcestershire sauce, salt, pepper, and paprika. Mix gently until just combined, being careful not to overwork the meat.

Form Mini Loaves: Divide the mixture into equal portions, approximately 1/3 cup each. Shape them into mini loafs or patties, depending on your preference.

Wrap with Bacon: Take one slice of bacon and wrap it around each mini loaf, ensuring the ends of the bacon are tucked underneath. Depending on the size of your bacon, you may need to cut the slices in half for smaller mini loaves.

Place on Baking Sheet: Transfer the bacon-wrapped meatloaf minis to the prepared baking sheet, making sure they aren’t touching to allow even cooking.

Add Ketchup: Brush a thin layer of ketchup over the tops of each meatloaf for added flavor and moisture.

Bake: Bake in the preheated oven for 25-30 minutes, or until the meat loaves are cooked through (internal temperature should reach 160°F or 70°C).

Crisp the Bacon: For extra crispiness, switch to the broiler setting for the last 5 minutes of cooking. Keep a close eye to prevent burning.

Rest and Serve: Remove from the oven and let the mini meatloaves rest for 5 minutes. Serve warm garnished with fresh parsley if desired.
