1 loaf of brioche or challah bread, cut into 1-inch cubes

4 large eggs

2 cups whole milk

1/2 cup heavy cream

1/2 cup brown sugar

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

2 large apples, peeled, cored, and diced (Granny Smith or Honeycrisp recommended)

1/2 cup chopped pecans or walnuts (optional)

Butter, for greasing the baking dish

Maple syrup, for serving

Preheat Your Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter and set aside.

    Prepare the Bread: Place the bread cubes in a large mixing bowl. If possible, let the bread sit out for a few hours or overnight to dry slightly, which helps the casserole hold its shape better.

      Make the Egg Mixture: In a separate bowl, whisk together the eggs, whole milk, heavy cream, brown sugar, vanilla extract, ground cinnamon, nutmeg, and salt until well blended.

        Combine Ingredients: Pour the egg mixture over the bread cubes, making sure all pieces are well coated. Gently fold in the diced apples and, if using, the chopped nuts.

          Let it Soak: Cover the mixture with plastic wrap and let it sit in the refrigerator for at least 30 minutes, or preferably, overnight. This allows the bread to soak in the custard and enhances the flavor.
