Ingredients

1 round wheel of Brie cheese (approximately 8 ounces)

1 cup fresh cranberries

1/2 cup pecans, chopped

1/4 cup brown sugar

2 tablespoons maple syrup

1 teaspoon vanilla extract

1 teaspoon cinnamon

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

1 sheet puff pastry, thawed (optional)

1 egg, beaten (for egg wash, optional)

Fresh baguette or crackers, for serving

Instructions

Prepare the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Prepare the Cranberry-Pecan Mixture: In a medium bowl, combine the fresh cranberries, chopped pecans, brown sugar, maple syrup, vanilla extract, cinnamon, and rosemary. Mix until the cranberries are well-coated and let it sit for about 10 minutes to macerate.

Assemble the Brie: If you're using puff pastry, roll it out on a lightly floured surface and place the Brie in the center. Spoon the cranberry-pecan mixture on top of the Brie. If you prefer to skip the pastry, simply place the Brie on the prepared baking sheet and heap the cranberry mixture on top.

Wrap the Brie (Optional): If you're using puff pastry, carefully fold the edges of the pastry over the Brie, sealing it well to encase the cheese. Brush the pastry with the beaten egg for a golden color.

Bake: Place the Brie (either wrapped in puff pastry or unwrapped) in the oven. Bake for about 25-30 minutes or until the Brie is soft and gooey, and the pastry (if used) is golden brown.

Serve: Once baked, remove from the oven and allow it to cool for about 5 minutes. Serve warm with slices of fresh baguette or an assortment of crackers, allowing guests to enjoy the melted cheese and sweet-tart topping.
