Ingredients

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon ground cumin

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon fresh rosemary or thyme (optional)

¼ cup grated Parmesan cheese (optional for extra flavor)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy clean-up.

Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Cut them into fry-shaped wedges, about 1/4 inch in thickness, ensuring they are uniform for even cooking.

Mix the Seasoning: In a large bowl, combine the olive oil, garlic powder, paprika, ground cumin, salt, and black pepper. If using fresh herbs, chop them finely and add to the mix. If you’re using Parmesan, set it aside for later.

Coat the Fries: Add the sweet potato fries to the bowl and toss until they are all evenly coated with the seasoning mixture.

Arrange on Baking Sheet: Spread the seasoned sweet potato fries out in a single layer on the prepared baking sheet. Make sure they are not overcrowded to allow for crispy baking.

Bake the Fries: Place the baking sheet in the preheated oven and bake for 20–25 minutes, flipping halfway through, until the fries are golden brown and crispy on the outside.

Add Cheese (Optional): If you are using grated Parmesan for extra flavor, sprinkle it over the fries during the last 5 minutes of baking for a cheesy finish.

Serve and Enjoy: Once done, remove the fries from the oven, let them cool for a few minutes, and serve warm. Enjoy with your favorite dipping sauce such as aioli, chipotle mayo, or a tangy yogurt dip!
