Beef Lettuce Wraps with Lemon Glaze

1 lb ground beef (preferably grass-fed for flavor)

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1/2 cup grated carrots

1/2 cup bell pepper, diced (any color)

1/4 cup fresh cilantro, chopped

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

Zest of 1 lemon

Juice of 1 lemon

Salt and pepper, to taste

1 head of butter lettuce or romaine lettuce, leaves separated

Sliced green onions and extra cilantro for garnish

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until they are soft and fragrant, about 3-4 minutes.

    Brown the Meat: Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, stirring and breaking it apart with a wooden spoon, about 5-7 minutes. Drain excess fat if necessary.

      Add Vegetables and Seasoning: Stir in the grated carrots and diced bell pepper, cooking until they are tender, about 3 minutes. Then, mix in the soy sauce, hoisin sauce, rice vinegar, sesame oil, lemon zest, and lemon juice. Season with salt and pepper to taste. Cook for an additional 2-3 minutes, allowing the flavors to meld.

        Prepare the Lettuce Wraps: Once the beef mixture is cooked and flavorful, remove the skillet from heat. Take a lettuce leaf and spoon a generous amount of the beef filling into the center.
