1 pre-made pie crust (9 inches)

2 tablespoons olive oil

2 large onions, thinly sliced

8 ounces mushrooms, sliced (button or cremini work well)

3 large eggs

1 cup heavy cream

1 cup shredded Gruyère cheese

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Optional: Fresh parsley for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Caramelize the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for about 20-25 minutes until the onions are golden brown and caramelized. If they start to stick, lower the heat and add a splash of water. Remove from heat and set aside.

      Sauté the Mushrooms: In the same skillet, add a little more oil if needed and sauté the sliced mushrooms over medium-high heat until they are tender and golden, about 5-7 minutes. Season with salt and pepper. Combine with the caramelized onions and thyme. Set aside to cool slightly.

        Prepare the Egg Mixture: In a medium bowl, whisk together the eggs, heavy cream, and a little more salt and pepper until well combined.

          Assemble the Quiche: Place the pie crust in a 9-inch pie pan. Spread the caramelized onion and mushroom mixture evenly over the bottom of the crust. Pour the egg mixture over the top, ensuring it fills the crust evenly. Sprinkle the shredded Gruyère cheese on top.

            Bake: Carefully place the quiche in the preheated oven and bake for 35-40 minutes, or until the filling is set and the top is lightly golden.

              Cool and Serve: Once baked, remove the quiche from the oven and let it cool for about 10 minutes before slicing. Garnish with fresh parsley, if desired.
