1 cup finely grated carrots (about 2 medium carrots)

1 cup peeled and grated apple (about 1 large apple, such as Granny Smith or Honeycrisp)

1 ½ cups all-purpose flour

1 cup brown sugar, packed

½ cup granulated sugar

½ cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon nutmeg

¼ teaspoon salt

½ cup chopped walnuts or pecans (optional)

½ cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Prepare the Dry Ingredients: In a large bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

      Mix the Wet Ingredients: In another bowl, beat together the oil, eggs, and vanilla extract until smooth and creamy.

        Combine: Sprinkle the grated carrots and apples into the bowl with the wet ingredients and mix until they’re coated evenly.

          Merge: Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine! If desired, fold in the nuts and dried fruit.

            Scoop the Batter: Divide the batter evenly amongst the muffin cups, filling each about ¾ full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

                Cool: Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
