Ingredients

1 pound ground beef

2 cups broccoli florets (fresh or frozen)

1 cup uncooked white rice

3 cups beef broth

1 cup sharp cheddar cheese, shredded

1/2 cup cream of mushroom soup (or homemade equivalent)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons butter (optional, for breadcrumb topping)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C).

Cook the Beef: In a large skillet over medium heat, add the olive oil and ground beef. Cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain any excess fat.

Add Seasonings: Stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well and cook for another minute to let the flavors meld.

Combine Ingredients: In a large mixing bowl, combine the browned beef, uncooked rice, broccoli florets, cream of mushroom soup, and 2 cups of beef broth. Stir until everything is well mixed.

Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

Add Broth: Pour the remaining 1 cup of beef broth over the mixture in the baking dish to ensure the rice cooks thoroughly.

Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top.

Prepare Breadcrumb Topping (optional): In a small bowl, melt the butter and add the breadcrumbs, stirring to coat. Sprinkle this mixture evenly over the cheese layer for added crunch.

Bake: Cover the casserole with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and the rice is cooked through.

Serve: Let the casserole sit for 5 minutes before slicing. Serve warm and enjoy!
