Ingredients

2 cups broccoli florets (fresh or frozen)

1 pound boneless, skinless chicken breasts, cubed

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

1 cup cooked quinoa or rice

1 cup sharp cheddar cheese, shredded

½ cup cream cheese, softened

½ cup chicken broth

½ teaspoon dried thyme

¼ teaspoon red pepper flakes (optional)

Fresh parsley, chopped, for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Sauté the Chicken: In a large oven-safe skillet, heat the olive oil over medium heat. Add the cubed chicken breasts and season with garlic powder, onion powder, paprika, salt, and pepper. Cook for about 5-7 minutes or until the chicken is browned and cooked through.

Add the Broccoli: Stir in the broccoli florets and cook for an additional 3-4 minutes until they are bright green and slightly tender.

Combine Ingredients: Reduce the heat to low. Add the cooked quinoa (or rice), cream cheese, chicken broth, dried thyme, and red pepper flakes (if using) to the skillet. Stir everything together until well combined and the cream cheese has melted.

Cheesy Layer: Sprinkle the shredded cheddar cheese evenly over the mixture in the skillet, ensuring it covers most of the surface.

Bake: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Remove the skillet from the oven and let it cool for a couple of minutes. Garnish with chopped fresh parsley before serving. Enjoy this cheesy and hearty dish hot!
