9-12 lasagna noodles

2 tablespoons olive oil

1 medium onion, sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 rotisserie chicken, shredded

1 cup cream cheese, softened

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 cup sour cream

1 cup salsa

1/4 cup fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Noodles: In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to prevent sticking.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced onion, red and green bell peppers, and garlic. Sauté until softened, about 5-7 minutes. Stir in the chili powder, cumin, paprika, salt, and black pepper, cooking for an additional 1-2 minutes.

        Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded rotisserie chicken, sautéed vegetables, cream cheese, half of the Monterey Jack cheese, and half of the cheddar cheese. Mix until well combined.

          Assemble the Lasagna Rolls: On a flat surface, take a cooked lasagna noodle and spread about 1-2 tablespoons of the chicken mixture evenly over the noodle. Carefully roll it up from one end to the other. Repeat with the remaining noodles and filling.

            Prepare the Baking Dish: Spread 1/2 cup of salsa evenly on the bottom of a 9x13-inch baking dish. Place the rolled lasagna noodles seam side down in the dish. Pour the remaining salsa over the top of the rolls.

              Add Cheese: In a separate bowl, combine the remaining Monterey Jack and cheddar cheeses. Sprinkle the cheese mixture generously over the top of the lasagna rolls.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                  Garnish and Serve: Once baked, remove from the oven and let cool for a few minutes. Garnish with fresh cilantro before serving.
