Cheesy Hashbrown Breakfast Casserole

30 oz frozen hashbrowns (thawed)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup crumbled cooked bacon (or breakfast sausage)

6 large eggs

1 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 green onions, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Mix Hashbrowns: In a large mixing bowl, combine the thawed hashbrowns with half of the cheddar cheese and half of the mozzarella cheese. Season with salt and pepper.

      Prepare the Baking Dish: Grease a 9x13 inch baking dish with cooking spray or butter. Spread the hashbrown mixture evenly in the bottom of the dish.

        Cook the Meat: If you’re using bacon or sausage, cook it in a skillet over medium heat until fully cooked. Drain the excess fat and sprinkle the crumbled meat evenly over the hashbrowns.

          Whisk the Egg Mixture: In another bowl, whisk together the eggs, milk, garlic powder, onion powder, paprika, salt, and pepper until well combined.

            Combine Ingredients: Pour the egg mixture evenly over the hashbrown layer in the baking dish. Use a spatula to gently push down any exposed hashbrowns to ensure they absorb the egg mixture.

              Top with Cheese: Sprinkle the remaining cheddar and mozzarella cheeses on top of the casserole for a gooey finish.

                Bake: Place the casserole in the preheated oven and bake for 45-50 minutes, or until the egg is set and the top is bubbly and golden brown.

                  Garnish and Serve: Remove from the oven and let it cool for a few minutes. Sprinkle with chopped green onions before serving.
