Ingredients

2 cups mashed potatoes (leftover or freshly made)

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (plus extra for coating)

1/4 cup chopped green onions (or chives)

1 large egg

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Vegetable oil (for frying)

Instructions

Prepare Mashed Potatoes: If using leftovers, ensure they are cooled to room temperature. If making fresh, boil potatoes until tender, mash them, and let cool slightly.

Mix Ingredients: In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, 1/2 cup breadcrumbs, green onions, egg, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are fully incorporated.

Form Tots: With your hands, take a small amount of the potato mixture and roll it into a small cylinder or ball, about the size of a golf ball. Repeat until all the mixture is used.

Coat the Tots: Roll each potato tot in the extra breadcrumbs to create a crispy outer layer.

Heat Oil: In a deep frying pan, heat about 1 inch of vegetable oil over medium-high heat until hot but not smoking. You can test by dropping a small piece of the potato mixture into the oil; it should sizzle when ready.

Fry the Tots: Carefully add the potato tots to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown, flipping halfway through for even cooking.

Drain and Serve: Once they are golden and crispy, remove the tots with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Garnish and Enjoy: Serve warm, garnished with additional chopped green onions, and perhaps a side of sour cream or your favorite dipping sauce. Enjoy your cheesy, crispy delights!
