Chili Chicken Pasta Salad Jars

2 cups cooked pasta (penne or rotini work best)

1 cup cooked and shredded chicken breast

1 cup cherry tomatoes, halved

1/2 cup black beans, rinsed and drained

1/2 cup corn kernels (fresh or canned)

1 bell pepper (red, yellow, or orange), diced

1/4 cup red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/2 cup mayonnaise or Greek yogurt

2 tablespoons lime juice

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Optional: Sliced jalapeños for extra heat

Optional: Tortilla chips for garnish

Prepare the Chicken: If you haven't done so already, cook and shred the chicken breast. Season with salt, pepper, and a sprinkle of chili powder for an extra kick.

    Cook the Pasta: Boil the pasta according to package instructions until al dente. Drain and rinse under cold water to cool it down.

      Make the Dressing: In a small bowl, whisk together the mayonnaise (or Greek yogurt), lime juice, chili powder, cumin, salt, and pepper until smooth.

        Combine Ingredients: In a large bowl, combine the cooled pasta, shredded chicken, cherry tomatoes, black beans, corn, bell pepper, red onion, and cilantro. Drizzle the dressing over the mixture and toss gently until well coated.

          Layer the Jars: Prepare 4-6 mason jars (or any airtight container). Start by spooning a layer of the pasta salad into each jar. Add a layer of diced avocado on top to prevent browning. If using, add sliced jalapeños for heat.

            Seal and Chill: Seal the jars tightly and store them in the refrigerator for at least 30 minutes to allow the flavors to meld together.
