Cinnamon Sugar Pumpkin Donuts

1 cup pure pumpkin puree (not pumpkin pie filling)

½ cup granulated sugar

½ cup brown sugar, packed

1/3 cup vegetable oil

2 large eggs

1 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp ground ginger

¼ tsp ground cloves

½ cup granulated sugar (for coating)

2 tsp ground cinnamon (for coating)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and well combined.

      Combine Dry Ingredients: In another bowl, sift together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, nutmeg, ginger, and cloves.

        Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula until just combined. Be careful not to overmix; a few lumps are fine.

          Fill Donut Pan: Use a piping bag or a ziplock bag with a corner snipped off to fill each donut mold about ¾ full with the batter.

            Bake Donuts: Bake in the preheated oven for about 12-15 minutes, or until a toothpick inserted into the center comes out clean. The donuts should be slightly golden on top.

              Cool and Coat: Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack. While they are cooling, mix together the ½ cup granulated sugar and 2 tsp ground cinnamon in a shallow dish.

                Sugar Coating: Once the donuts are cool enough to handle, roll each donut in the cinnamon sugar mixture until fully coated.
