1 cup rolled oats (or oat flour)

1 scoop vanilla protein powder (whey or plant-based)

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon salt

1 tablespoon coconut sugar (or sweetener of choice)

1 cup almond milk (or milk of choice)

1 large egg (or flax egg for vegan option)

1 teaspoon vanilla extract

2 tablespoons melted coconut oil (or melted butter)

2 tablespoons nut butter (optional, for extra protein)

Cinnamon swirl mixture: 2 tablespoons coconut sugar + 1 teaspoon ground cinnamon

Instructions
 

Prepare Dry Ingredients: In a large mixing bowl, combine the rolled oats, protein powder, baking powder, ground cinnamon, salt, and coconut sugar. Whisk until well blended.

    Combine Wet Ingredients: In a separate bowl, whisk together the almond milk, egg, vanilla extract, and melted coconut oil until smooth and well combined.

      Combine Both Mixtures: Pour the wet ingredients into the dry ingredients. Stir until just mixed. Let the batter sit for about 5 minutes, allowing the oats to absorb some liquid.

        Make the Cinnamon Swirl: In a small bowl, mix together the coconut sugar and ground cinnamon for the swirl.

          Preheat the Waffle Maker: Preheat your waffle maker according to manufacturer instructions. Lightly grease it with non-stick cooking spray or a little coconut oil.
