12 ounces spaghetti or linguine

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 cup mushrooms, sliced

2 cups cooked chicken, shredded (or rotisserie chicken)

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

4 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1/4 cup breadcrumbs (optional)

Chopped fresh parsley for garnish

Preheat your oven to 350°F (175°C).

    Cook the spaghetti or linguine according to package directions until al dente, then drain and set aside.

      In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.

        Add minced garlic and sliced mushrooms to the skillet and sauté for an additional 5 minutes, until the mushrooms are golden brown and tender.

          Stir in the shredded chicken, frozen peas, dried thyme, oregano, salt, and pepper. Allow everything to heat through for another 2-3 minutes, then remove from heat.

            In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute to create a roux.

              Gradually add chicken broth, stirring constantly, until the mixture is smooth and thickened, about 4-5 minutes.

                Incorporate the heavy cream and half of the Parmesan cheese, stirring until well combined and creamy.

                  In a large mixing bowl, combine the cooked pasta with the chicken mixture and the creamy sauce. Mix well to ensure everything is evenly coated.

                    Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle with mozzarella cheese, the remaining Parmesan, and breadcrumbs if using.

                      Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

                        Once out of the oven, let it sit for about 5-10 minutes. Garnish with chopped parsley before serving.
