200g dark chocolate (70% cocoa), chopped

3 tablespoons unsalted butter

3 large eggs, separated

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

Pinch of sea salt

Fresh berries (for garnish)

Whipped cream (for garnish, optional)

Dark chocolate shavings (for garnish, optional)

Instructions
 

Melt Chocolate: In a heatproof bowl, combine the chopped dark chocolate and unsalted butter. Place the bowl over a saucepan of simmering water (double boiler setup) and stir gently until melted and smooth. Remove from heat and let it cool slightly.

    Whip Egg Whites: In a clean mixing bowl, beat the egg whites with a pinch of sea salt until they form soft peaks. Gradually add the granulated sugar, continuing to beat until the mixture is glossy and forms stiff peaks.

      Mix Egg Yolks: In another bowl, whisk together the egg yolks and vanilla extract. Once the chocolate mixture has cooled slightly, slowly fold the egg yolks into the chocolate until well combined.

        Combine Mixtures: Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the whites.

          Whip Cream: In a separate mixing bowl, whip the heavy cream until soft peaks form. Then, carefully fold the whipped cream into the chocolate mixture, ensuring a light and airy texture.

            Chill: Spoon or pipe the mousse into individual cups or serving glasses. Cover with plastic wrap and chill in the refrigerator for at least 2 hours, or until set.

              Serve: Once set, garnish with fresh berries, dollops of whipped cream, and dark chocolate shavings for an elegant touch.
