1 cup (125g) all-purpose flour, sifted

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup (115g) unsalted butter, plus extra for greasing

3/4 cup (150g) granulated sugar

2 large eggs, at room temperature

1 teaspoon pure vanilla extract

Zest of 1 lemon (optional for a citrus twist)

Powdered sugar, for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a madeleine pan with melted butter and lightly dust with flour, tapping out any excess.

    Mix Dry Ingredients: In a small bowl, whisk together the sifted flour, baking powder, and salt. Set aside.

      Melt the Butter: In a saucepan over low heat, melt the butter until it’s fully liquid. Remove from heat and let it cool slightly.

        Beat the Eggs and Sugar: In a medium mixing bowl, use a whisk or electric mixer to beat the eggs and granulated sugar together until the mixture is pale, thick, and fluffy—around 3-5 minutes.

          Add Flavor: Add the vanilla extract and lemon zest (if using) to the egg mixture and blend well.

            Combine Ingredients: Gradually fold the dry ingredients into the egg-sugar mixture using a spatula. Be careful not to over-mix; just combine until you don’t see any more dry flour.

              Incorporate Butter: Slowly fold in the melted butter. Ensure it’s fully mixed but still fluffy.

                Chill the Batter: Cover the bowl with plastic wrap and refrigerate the batter for about 30 minutes. This step is crucial for getting that characteristic madeleine hump.

                  Fill the Pan: Once chilled, spoon the batter into the prepared madeleine molds, filling each mold about 2/3 full. Avoid overfilling to keep the shape intact.

                    Bake: Place the madeleine pan in the preheated oven and bake for 10-12 minutes or until the edges are golden and a toothpick inserted comes out clean. The tops should have a lovely dome shape.

                      Cool and Dust: Remove the madeleines from the oven, let them cool in the pan for about 2 minutes, then gently remove them and place them on a wire rack. Dust with powdered sugar, if desired.
