8 oz elbow macaroni

2 cups broccoli florets

1 cup cauliflower florets

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

3 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups milk (whole or 2%)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Optional: breadcrumbs for topping

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. In the last 3 minutes of cooking, add the broccoli and cauliflower florets. Drain and set aside.

    Make the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1-2 minutes until bubbly and golden, creating a roux.
