Ingredients

2 cups unsweetened shredded coconut

1 cup almond flour

1/2 cup granulated erythritol (or preferred keto sweetener)

1/4 teaspoon sea salt

1/2 teaspoon pure vanilla extract

1/4 teaspoon almond extract

2 large egg whites

1/4 cup melted coconut oil

1/4 cup dark chocolate (sugar-free), for drizzling (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 325°F (163°C). Line a baking sheet with parchment paper for easier cleanup.

Mix Dry Ingredients: In a large bowl, combine the unsweetened shredded coconut, almond flour, erythritol, and sea salt. Stir well to ensure all dry ingredients are evenly incorporated.

Combine Wet Ingredients: In a separate bowl, whisk together the egg whites, melted coconut oil, vanilla extract, and almond extract until blended.

Combine Mixtures: Pour the wet mixture into the dry mixture and stir until fully combined. The mixture should be sticky but firm enough to hold its shape.

Shape the Macaroons: Using your hands or a cookie scoop, form small mounds (about 1.5 inches in diameter) and place them on the prepared baking sheet, about an inch apart.

Bake: Place the baking sheet in the oven and bake for 15-18 minutes, or until the macaroons turn a light golden brown.

Cool: Once baked, remove the macaroons from the oven and let them cool on the baking sheet for about 10 minutes. Then transfer them to a wire rack to cool completely.

Optional Chocolate Drizzle: If you’d like to add a chocolate drizzle, melt the sugar-free dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between. Once melted, drizzle over the cooled macaroons using a fork or piping bag.

Serve and Enjoy: Enjoy your tropical bliss coconut almond macaroons as a delightful keto-friendly treat or dessert! Store any leftovers in an airtight container in the refrigerator for up to a week.
