2 cups cooked pasta (fusilli or penne work well)

1 cup cooked chicken breast, diced

1 cup homemade or store-bought basil pesto

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, thinly sliced

1/4 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled

2 tablespoons pine nuts, toasted (optional)

Salt and pepper, to taste

Fresh basil leaves, for garnish

2 tablespoons olive oil

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Chicken: If using leftover chicken, shred or dice it into bite-sized pieces. If cooking fresh chicken, season with salt, pepper, and a drizzle of olive oil, then grill or sauté until fully cooked. Let it cool, then dice.
