Ingredients

1 cup orzo pasta

2 cups water

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup feta cheese, crumbled

1/4 cup fresh basil leaves, chopped

Zest of 1 lemon

Juice of 2 lemons

3 tablespoons extra virgin olive oil

Salt and pepper, to taste

Instructions

Cook the Orzo: In a medium saucepan, bring 2 cups of water to a boil. Add the orzo pasta and cook according to the package instructions until al dente, typically about 8-10 minutes. Drain and set aside to cool.

Prepare the Vegetables: While the orzo is cooking, prepare the vegetables. Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion.

Mix the Dressing: In a small bowl, whisk together the lemon zest, lemon juice, olive oil, salt, and pepper until well combined. Adjust seasoning as desired.

Combine Ingredients: In a large mixing bowl, combine the cooled orzo, cucumber, cherry tomatoes, red onion, and feta cheese. Pour the dressing over the salad and toss gently to combine.

Add Fresh Herbs: Fold in the chopped basil leaves, being careful to maintain their freshness.

Chill and Serve: Cover the salad with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled as a refreshing side or light main dish.
