Cold Mediterranean Veggie Pasta

8 oz. whole wheat pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1 small red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/2 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/4 cup extra virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper to taste

Zest and juice of 1 lemon

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

    Prepare the Veggies: While the pasta is cooking, chop the cherry tomatoes, cucumber, red bell pepper, and red onion. Place them in a large mixing bowl.

      Combine the Ingredients: Once the pasta has cooled, add it to the bowl with the chopped vegetables. Stir in the Kalamata olives, crumbled feta cheese, parsley, and basil.

        Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, lemon zest, and lemon juice. Season the dressing with salt and pepper to taste.

          Dress the Pasta: Pour the dressing over the pasta and veggie mixture. Toss gently until everything is well coated.

            Chill: Cover the bowl with a lid or plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

              Serve: After chilling, give the pasta salad a good stir. Taste and adjust seasoning if necessary. Serve it cold as a refreshing main dish or side.
