Cold Shrimp & Avocado Salad

1 pound large shrimp, peeled and deveined

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

2 tablespoons extra virgin olive oil

1 tablespoon lime juice

1 teaspoon honey (or agave syrup)

Salt and black pepper, to taste

Optional: 1 jalapeño, finely chopped (for spice)

Instructions
 

Cook the Shrimp: In a large pot, bring salted water to a boil. Add the shrimp and cook for about 2-3 minutes, or until they turn pink and opaque. Drain and transfer to an ice bath to cool. Once chilled, drain again and pat dry.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper until well combined.

      Combine Ingredients: In a large mixing bowl, gently toss the cooled shrimp, diced avocado, cherry tomatoes, cucumber, red onion, cilantro, and jalapeño (if using).

        Dress the Salad: Pour the dressing over the shrimp and avocado mixture and gently fold until everything is evenly coated. Be careful not to mash the avocado.

          Chill: Cover the salad and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

            Serve: Give the salad a gentle toss before serving. Enjoy as a refreshing appetizer or alongside grilled meats for a light main dish.
