Cranberry Brie Phyllo Cups

1 package of phyllo pastry dough (about 1 pound), thawed

1 cup fresh or frozen cranberries

1/2 cup sugar

1 tablespoon orange juice

1/2 cup walnuts, chopped

8 ounces Brie cheese, cut into small cubes

1/2 teaspoon ground cinnamon

1/4 cup honey

1/4 cup melted butter (for brushing phyllo)

Fresh rosemary, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Make the Cranberry Compote: In a medium saucepan over medium heat, combine the cranberries, sugar, orange juice, and ground cinnamon. Cook, stirring occasionally, until the cranberries pop and the mixture thickens, about 8-10 minutes. Remove from heat and let it cool.

      Prepare the Phyllo Cups: On a clean surface, unroll the phyllo dough. Keep it covered with a damp towel to prevent it from drying out. Take one sheet and brush it with melted butter. Layer another sheet on top and brush with butter again. Repeat until you have 4-5 layers.

        Cut and Shape: Using a sharp knife or kitchen scissors, cut the layered phyllo into squares (about 3x3 inches). Gently press each square into the wells of a mini muffin tin, forming a cup shape.

          Assemble the Cups: Place a small cube of Brie cheese into each phyllo cup. Top with a spoonful of the cranberry compote and a sprinkle of chopped walnuts.

            Bake: Bake in the preheated oven for 12-15 minutes, or until the phyllo is golden brown and crispy. Keep an eye on them to prevent overbrowning.

              Serve & Garnish: Remove from the oven and let cool slightly. Drizzle with honey and garnish with fresh rosemary if desired. Serve warm for a delightful hors d'oeuvre!
