Ingredients

1 cup rolled oats

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup dried cranberries

1 cup walnuts, chopped

1/2 cup white chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a medium bowl, combine the rolled oats, all-purpose flour, baking soda, baking powder, ground cinnamon, and salt. Set aside.

Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture, mixing just until combined.

Fold in Add-Ins: Gently fold in the dried cranberries, chopped walnuts, and white chocolate chips (if using) until evenly distributed throughout the dough.

Scoop Cookies: Using a cookie scoop or two tablespoons, drop rounded dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers still look slightly underbaked. They will firm up as they cool.

Cool: Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Serve your delicious cranberry walnut oatmeal cookies warm, with a glass of milk or your favorite cup of tea!
