1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups fresh broccoli florets

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup shredded cheddar cheese

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

½ cup grated Parmesan cheese (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt, pepper, thyme, and paprika. Cook for about 5-7 minutes until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Sauté the Onion and Garlic: In the same skillet, add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for 1 more minute, stirring frequently to prevent burning.

      Add Broccoli: Stir in the broccoli florets and cook for another 2-3 minutes until they start to become tender but still crispy.

        Make the Sauce: Pour in the chicken broth and bring to a simmer. Allow it to reduce for about 2-3 minutes, then lower the heat and pour in the heavy cream. Stir until combined and simmer for an additional 2 minutes.

          Combine Everything: Return the cooked chicken to the skillet. Stir in the shredded cheddar cheese until melted and smooth, coating the chicken and broccoli well in the creamy sauce. Taste and adjust seasoning if necessary.

            Serve: Remove from heat. Sprinkle the grated Parmesan cheese on top and garnish with fresh parsley. Serve hot as a comforting one-pan meal.
