8 oz (225g) fettuccine or spaghetti

2 tablespoons olive oil

1 pound (450g) boneless, skinless chicken breast, chopped

Salt and pepper, to taste

3 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 teaspoon Italian seasoning

5 oz (140g) fresh spinach

½ cup (50g) grated Parmesan cheese

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or spaghetti according to package instructions until al dente. Reserve about ½ cup of the pasta water, then drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chopped chicken breast with salt and pepper. Add the chicken to the skillet and cook for 5-7 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth and bring to a simmer. Allow it to reduce slightly, about 2-3 minutes.

        Make it Creamy: Pour in the heavy cream and stir in the Italian seasoning. Let the mixture simmer for another 2-3 minutes until it thickens slightly.

          Add Spinach and Chicken: Stir in the fresh spinach and cooked chicken until the spinach wilts. If the sauce is too thick, add a bit of the reserved pasta water until desired consistency is reached.

            Combine with Pasta: Add the drained pasta into the skillet and toss to coat in the creamy sauce. Stir in the grated Parmesan cheese and mix until well combined. Season with additional salt and pepper, if needed.
