12 oz (340g) penne pasta

1 lb (450g) boneless, skinless chicken breasts, diced

2 tablespoons olive oil

3 garlic cloves, minced

1 small onion, finely chopped

4 cups fresh spinach, chopped

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Red pepper flakes (optional, for a kick)

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Cook the Chicken: In a large skillet, heat olive oil over medium heat. Season the diced chicken with salt and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 6-7 minutes. Remove from skillet and set aside.

      Sauté Aromatics: In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 2-3 minutes.

        Add Spinach: Stir in the chopped spinach and cook until wilted, about 2 minutes.

          Create the Sauce: Pour in the chicken broth and heavy cream. Bring the mixture to a simmer, then stir in the Italian seasoning, salt, and pepper. Allow to cook for another 2-3 minutes until slightly thickened.
