Ingredients

8 oz. penne pasta

2 cups cooked chicken, shredded or diced

1 cup frozen peas and carrots mix

1/2 cup diced celery

1/2 cup diced onion

3 cloves garlic, minced

4 tablespoons butter

4 tablespoons all-purpose flour

2 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried parsley

1/2 teaspoon black pepper

Salt to taste

1 cup shredded cheddar cheese (optional for extra creaminess)

Fresh parsley, chopped for garnish

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package directions until al dente. Drain and set aside.

Sauté Vegetables: In a large skillet over medium heat, melt the butter. Add the diced onion, celery, and garlic, sautéing for about 3-4 minutes until they're soft and fragrant.

Make the Roux: Sprinkle the flour over the sautéed vegetables in the skillet, stirring continuously for about 1-2 minutes to create a roux. This will help thicken your sauce.

Add Chicken Broth: Gradually whisk in the chicken broth, ensuring there are no lumps. Bring the mixture to a simmer and let it cook for 3-5 minutes until it begins to thicken.

Stir in Heavy Cream: Reduce the heat to low and stir in the heavy cream. Add the dried thyme, dried parsley, black pepper, and salt to taste, mixing well.

Combine Ingredients: Add the cooked chicken and frozen peas and carrots to the sauce, stirring until everything is evenly coated. Let it simmer for an additional 3-4 minutes.

Combine with Pasta: Add the cooked penne pasta to the skillet, tossing everything together until the pasta is well incorporated with the creamy sauce. If using, sprinkle in the shredded cheddar cheese and mix until melted.

Serve: Remove from heat, garnish with fresh chopped parsley, and serve hot. Enjoy your comforting Creamy Chicken Pot Pie Pasta!
