For the Chocolate Layer:

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1/2 cup whole milk

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 tsp vanilla extract

For the Vanilla Layer:

1 cup all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1/2 cup whole milk

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

2 tsp vanilla extract

For the Strawberry Layer:

1 cup all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1/2 cup whole milk

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup pureed fresh strawberries

1 tsp vanilla extract

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 tsp vanilla extract

Rainbow sprinkles (for decoration)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.

    Make the Chocolate Layer: In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla. In another bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Gradually blend the dry ingredients into the creamed mixture, alternating with the milk until smooth. Pour the batter into one of the prepared pans and spread evenly.

      Make the Vanilla Layer: Repeat the process as with the chocolate layer, but omit the cocoa powder and use only vanilla extract. Pour this batter into the second prepared pan.

        Make the Strawberry Layer: In a third bowl, combine the butter and sugar until fluffy, then beat in the eggs and vanilla. Sift the flour, baking powder, baking soda, and salt into the mixture. Stir in the strawberry puree and gradually mix in the milk. Pour this batter into the final prepared pan.

          Bake: Place all three pans in the oven and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in their pans for about 10 minutes before transferring them to wire racks to cool completely.

            Prepare the Cream Cheese Frosting: In a mixing bowl, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and beat until fluffy. Mix in the vanilla extract.

              Assemble the Cake: Once the layers have cooled completely, begin stacking them on a serving platter. Start with the chocolate layer, spreading a layer of cream cheese frosting on top. Add the vanilla layer, another layer of frosting, then top with the strawberry layer. Frost the entire outside of the cake with the remaining cream cheese frosting.

                Decorate: Finish by topping the cake with rainbow sprinkles for a colorful touch.

                  Serve: Slice and serve chilled for a refreshing treat!
