Creamy Roasted Garlic Hummus Dip

Ingredients
  

1 large head of garlic

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

1/4 cup plain Greek yogurt

2 tablespoons olive oil, plus more for serving

2 tablespoons lemon juice (freshly squeezed)

1/2 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, for garnish

Pita chips or sliced vegetables, for serving

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves slightly. Drizzle with olive oil and wrap in aluminum foil. Roast in the preheated oven for about 30-35 minutes, or until the garlic is soft and golden. Allow to cool slightly, then squeeze the roasted garlic cloves out of their skins and set aside.

    Blend the Ingredients: In a food processor, combine the roasted garlic cloves, chickpeas, tahini, Greek yogurt, olive oil, lemon juice, cumin, smoked paprika, salt, and pepper. Blend until smooth and creamy. If the mixture is too thick, add a little water, one tablespoon at a time, until you reach your desired consistency.

      Taste and Adjust: Taste the hummus and adjust the seasoning, adding more salt, pepper, or lemon juice according to your preference.

        Serve: Transfer the hummus to a serving bowl. Drizzle a little olive oil on top and sprinkle with fresh parsley and extra smoked paprika, if desired.
