Creamy Roasted Garlic Mashed Potatoes

2 pounds Yukon Gold potatoes, peeled and cut into large chunks

1 head of garlic

4 tablespoons unsalted butter

¾ cup heavy cream (more if needed)

¼ cup sour cream

Salt, to taste

Freshly cracked black pepper, to taste

Chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Roast the Garlic: Slice the top off the head of garlic to expose the cloves. Drizzle with olive oil and wrap tightly in aluminum foil. Place it on a baking sheet and roast for 30-35 minutes, until the cloves are soft and fragrant. Remove from the oven and let it cool slightly.

      Boil the Potatoes: While the garlic is roasting, place the peeled and chopped potatoes in a large pot. Cover with cold water, add a pinch of salt, and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.

        Drain and Steam: Drain the potatoes in a colander and return them to the hot pot for a minute to evaporate any excess moisture.

          Squeeze in the Garlic: Once the roasted garlic is cool enough to handle, squeeze the cloves out of their skins and directly into the pot with the potatoes.

            Mash and Mix: Add the butter, heavy cream, and sour cream to the pot. Use a potato masher or a ricer to mash everything together until creamy. If needed, adjust the consistency with additional cream.

              Season: Season the mashed potatoes with salt and freshly cracked black pepper to taste, mixing until well combined.

                Serve: Transfer the mashed potatoes to a serving bowl and garnish with chopped chives for a fresh touch.
