Creamy Zucchini & Rice Casserole

2 medium zucchinis, sliced into thin rounds

1 cup uncooked white rice

2 cups vegetable broth

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.

      Add Zucchini: Stir in the sliced zucchini with the oregano, salt, pepper, and red pepper flakes (if using). Cook for another 5-6 minutes until the zucchini softens slightly. Remove from heat.

        Prepare the Rice Mixture: In a large bowl, combine the uncooked white rice and vegetable broth. Stir in the heavy cream, half of the mozzarella cheese, and half of the Parmesan cheese. Mix well to combine.

          Combine Components: Add the sautéed zucchini mixture to the rice combination and stir until all ingredients are well mixed.

            Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

              Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheese generously over the top of the casserole.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes until the top is golden and the rice is tender.

                  Let It Rest: Once baked, remove the casserole from the oven and let it rest for 5-10 minutes before serving. This helps the flavors to meld and the casserole to set.
