Crispy Air Fryer Mozzarella Stuffed Meatballs

For the Meatballs:

1 lb ground beef (or ground turkey for a lighter option)

1/2 cup breadcrumbs (preferably Italian seasoned)

1/4 cup grated Parmesan cheese

1/4 cup fresh chopped parsley (or 2 tablespoons dried)

2 cloves garlic, minced

1 egg

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional for a kick)

For the Stuffing:

8 oz mozzarella cheese, cut into small cubes

For the Coating:

1/2 cup breadcrumbs

1/2 teaspoon Italian seasoning

1/4 teaspoon salt

Non-stick cooking spray or olive oil spray

Prepare the Meatball Mixture:

    In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, onion powder, salt, black pepper, and red pepper flakes (if using). Mix everything thoroughly until well combined.

      Stuff the Meatballs:

        Take a handful of the meat mixture and flatten it in your palm. Place a cube of mozzarella in the center, then encase the cheese by folding the meat around it into a ball shape. Ensure the cheese is completely covered. Place on a plate and repeat for all meatballs.

          Coat the Meatballs:

            In a shallow dish, mix the breadcrumbs with Italian seasoning and salt. Roll each stuffed meatball in the breadcrumb mixture until fully coated. Set aside.

              Preheat the Air Fryer:

                Preheat your air fryer to 380°F (193°C) for about 5 minutes.

                  Air Fry the Meatballs:

                    Lightly spray the air fryer basket with non-stick cooking spray. Arrange the meatballs in a single layer, making sure they are not overcrowded (you may need to cook in batches). Lightly spray the tops of the meatballs with olive oil spray for extra crispiness.

                      Cooking Time:

                        Air fry the meatballs at 380°F (193°C) for 12-15 minutes, or until they are golden brown and cooked through (internal temperature should reach 165°F or 74°C).

                          Serve:

                            Once cooked, remove the meatballs from the air fryer and let them cool for a minute. Serve warm, accompanied by marinara sauce for dipping and a sprinkle of fresh parsley on top.
