My mom would whip up various fillings, and I fondly remember our family debates over which flavor was the ultimate champion. Fast forward to today, and my love for quesadillas remains unwavering. One recipe that has taken center stage in my kitchen is Crispy BBQ Chicken Quesadillas. This dish combines tender, shredded chicken coated in sweet and tangy BBQ sauce, a melody of cheeses, and a hint of fresh cilantro, all perfectly encased in a crispy tortilla.

Crispy BBQ Chicken Quesadillas

Ingredients
  

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

1 ½ cups shredded cheddar cheese

1 cup shredded mozzarella cheese

½ cup red onion, thinly sliced

½ cup fresh cilantro, chopped

4 large flour tortillas

2 tablespoons olive oil (for frying)

Sour cream and avocado slices, for serving (optional)

Instructions
 

Preheat and Prepare: Heat a large skillet over medium heat.

    Mix Chicken and Sauce: In a mixing bowl, combine the shredded chicken with the BBQ sauce. Ensure the chicken is well-coated.

      Assemble Quesadillas: Place one tortilla on a clean surface. On one half of the tortilla, layer the following: ¼ cup of cheddar cheese, ¼ cup of mozzarella cheese, ½ cup of the BBQ chicken mixture, a sprinkle of red onion, and a bit of chopped cilantro. Fold the other half of the tortilla over the filling to create a half-moon shape.

        Cook the Quesadilla: Add 1 tablespoon of olive oil to the preheated skillet. Once heated, place the stuffed tortilla in the skillet. Cook for about 3-4 minutes on one side until golden brown and crispy. Carefully flip and cook for another 3-4 minutes on the other side. Remove from the skillet and let it cool for a minute before slicing.

          Repeat: Repeat the assembling and cooking process with the remaining ingredients to make three more quesadillas.

            Serve: Cut the quesadillas into wedges and serve with sour cream and avocado slices on the side for dipping. Garnish with extra cilantro if desired.
