Crispy Cauliflower Pita Sandwiches

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour if desired)

1 cup panko breadcrumbs

2 teaspoons garlic powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon salt

½ teaspoon black pepper

2 large eggs

4 whole wheat or regular pita breads

1 cup hummus (store-bought or homemade)

1 cup fresh spinach or mixed greens

1 cup sliced cucumbers

1 cup cherry tomatoes, halved

½ red onion, thinly sliced

Optional: feta cheese or avocado slices for topping

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a large mixing bowl, combine the flour, garlic powder, smoked paprika, ground cumin, salt, and black pepper. Mix well.

      Dredge the Cauliflower: Dip each cauliflower floret into the flour mixture, shaking off excess flour. Then, dip it into the eggs, letting the excess drip off, and finally coat with panko breadcrumbs, pressing gently to adhere. Place the coated florets on the prepared baking sheet.

        Bake the Cauliflower: Bake the cauliflower in the preheated oven for about 25-30 minutes, flipping halfway through, until golden brown and crispy.

          Prepare the Pita: While the cauliflower is baking, warm the pita breads either on a skillet over medium heat or wrap them in aluminum foil and place them in the oven for the last 5 minutes of the cauliflower roast.

            Assemble the Sandwiches: Spread a generous layer of hummus on each warmed pita. Layer with fresh spinach or mixed greens, followed by the crispy cauliflower, cucumbers, cherry tomatoes, and red onion.

              Add Optional Toppings: If desired, sprinkle feta cheese or add slices of avocado on top for extra flavor.
