Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup cherry tomatoes, halved

1 tablespoon fresh lemon juice

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped

1 head of Romaine lettuce, leaves separated

Sriracha or your favorite hot sauce (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: In a medium bowl, toss the drained chickpeas with olive oil, smoked paprika, garlic powder, cumin, salt, and black pepper. Ensure the chickpeas are evenly coated with the seasoning.

      Roast Chickpeas: Spread the seasoned chickpeas on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, shaking the pan halfway through, until they are golden brown and crispy.

        Mix Tomatoes: While the chickpeas are roasting, prepare the tomato filling. In a separate bowl, combine the halved cherry tomatoes, lemon juice, feta (if using), and chopped parsley. Toss to combine and set aside.

          Assemble Lettuce Wraps: Once the chickpeas are done, remove them from the oven and let them cool slightly. Take a lettuce leaf and spoon some of the tomato mixture into the center. Top with a generous amount of crispy chickpeas.

            Add Heat (Optional): If you love some spice, drizzle a little sriracha or hot sauce on top of the wraps.

              Serve: Roll the lettuce wrap up and enjoy immediately! Repeat with the remaining ingredients.
