1 cup grated aged cheese (like Gruyère or aged Hungarian Trappista)

1 cup all-purpose flour

1/2 cup corn starch

1/2 teaspoon paprika (preferably sweet Hungarian paprika)

1/2 teaspoon garlic powder

1/4 teaspoon ground black pepper

1/4 teaspoon salt

1/2 cup chilled unsalted butter, cubed

1 large egg, beaten

1 tablespoon cold water

Sesame seeds or poppy seeds (for topping)

Oil for frying

Prepare the Dough: In a large mixing bowl, combine the grated cheese, flour, corn starch, paprika, garlic powder, black pepper, and salt. Mix well to ensure the dry ingredients are evenly distributed.

    Incorporate Butter: Add in the cubed chilled butter. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.

      Combine Wet Ingredients: In a small bowl, whisk together the beaten egg and cold water. Slowly pour this mixture into the cheese-flour mixture, stirring until a dough forms.

        Chill the Dough: Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes to allow it to firm up.

          Roll and Cut: Once chilled, preheat your oven to 400°F (200°C). On a lightly floured surface, roll the dough out to about 1/4 inch thick. Cut the dough into strips (around 1/2 inch wide and 4 inches long) using a sharp knife or pizza cutter.

            Prepare for Baking: Place the cut cheese sticks on a parchment-lined baking sheet. Brush the tops lightly with beaten egg and sprinkle with sesame seeds or poppy seeds for added texture and flavor.

              Bake: Bake in the preheated oven for about 12-15 minutes or until golden brown and crispy. Keep an eye on them to avoid over-baking.

                Fry for Extra Crispiness: For an even crispier texture, heat oil in a deep frying pan over medium-high heat. Once hot, fry the cheese sticks in batches until golden and crispy, about 1-2 minutes per side. Remove and drain on paper towels.
